Black bean fiesta spinach wrap

Not only is this vegetarian dish fast, cheap and healthy- it is also versatile. You can add in chicken and or rice.

Here is what you'll need. (I do not know amounts as not only do I almost always have these items laying around...you can also add little or more of each ingredient. This is a recipe you can't screw up. Literally. And there are so many different variations to it. My friend makes her salsa/tomatoes from scratch using a can of rotel tomatoes with green chiles, lime juice, onion and garlic etc..you can also cheat and buy homemade restraunt style salsa and just toss in corn and beans etc...I'll get to that part later!

 1 can Rotel tomatoes with green chiles
finely diced onion (1/4 c)
lime juice or fresh lime
1 can of black beans
1 can of corn (yellow or white and yellow)
3 tbs cilantro chopped*(optional- i used this when i could get it cheap if not i opted out)*
fresh baby spinach
whole wheat or flour tortillas (or tortilla chips)

Strain juice from the beans and corn. In big dish or bowl add in beans, corn and tomatoes (leave in juice) onions, garlic and lime. (Amount is to taste really.) I use a little pour of lime juice or a squeeze or two of lime.

Place baby spinach (desired amount) on tortilla, spoon out the mixture from the bowl, yet again, to desired amount. Wrap. Eat :)

*** Non vegetarian version: IF you want to add in chicken....I like to add Spanish seasoning to the chicken and let simmer in a skillet with either fajita, taco or whatever Spanish seasonings you can think of. ***
You can also add rice (either fiesta seasoned with or without the chicken) sour cream, shredded mozzarella cheese...the options are broad for this dish. Which is why I enjoy this so much. My kids LOVE this!!!!!!!

You can eat it cold or heated.
